Ingredients
  • 1¾ cups cooked green or brown lentils
  • 1 onion, 2 carrots, 2 celery stalks, 1 cup peas, 8 oz mushrooms (chopped)

  • 2 cups vegetable broth

Instructions
  1. 1Preheat oven to 400°F. Boil potatoes until tender, mash with milk, butter/oil, and salt.
  2. 2Sauté onion, carrots, celery, and mushrooms 8 min. Add garlic, tomato paste, and herbs; cook 2 min.
  3. 3Stir in lentils, peas, and broth. Simmer 10-12 min until thickened. Season well.
  4. 4Transfer filling to baking dish. Top with mashed potatoes, score surface. Bake 25-30 min until golden.
