Lentil Vegetable Shepherdess Pie — a healthy halal recipe with 380 calories and 16g protein per serving.
Ingredients
- 1¾ cups cooked green or brown lentils
- 1 onion, 2 carrots, 2 celery stalks, 1 cup peas, 8 oz mushrooms (chopped)
- 3 garlic cloves, 2 tbsp tomato paste
- 2 tsp thyme, 1 tsp rosemary, 1 tsp smoked paprika, salt & pepper
- 2 cups vegetable broth
- Topping: 2½ lbs potatoes (or mix with sweet potato), ½ cup milk (dairy or plant), 2 tbsp butter or olive oil, salt
Instructions
- 1Preheat oven to 400°F. Boil potatoes until tender, mash with milk, butter/oil, and salt.
- 2Sauté onion, carrots, celery, and mushrooms 8 min. Add garlic, tomato paste, and herbs; cook 2 min.
- 3Stir in lentils, peas, and broth. Simmer 10-12 min until thickened. Season well.
- 4Transfer filling to baking dish. Top with mashed potatoes, score surface. Bake 25-30 min until golden.
