Ingredients
- 12-16 large white or cremini mushrooms, stems removed
- 1 cup cooked green lentils
- ½ cup breadcrumbs or almond flour
- 1 small onion, garlic, spinach (chopped)
- 2 tbsp olive oil, Italian herbs, salt, pepper
- ¼ cup grated parmesan or nutritional yeast
Instructions
- 1Chop mushroom stems and sauté with onion, garlic, and spinach. Mix with cooked lentils, breadcrumbs, herbs, and cheese.
- 2Brush mushroom caps with oil and stuff generously.
- 3Bake at 400°F for 20-25 minutes until golden and tender.
