Ingredients

- 1 large onion, diced
- 2 carrots, diced
- 4 garlic cloves, minced
- 1 cup brown lentils, rinsed
- 6 cups vegetable broth

- 6 cups fresh spinach, chopped
- Juice of 2 lemons, fresh parsley
Instructions
