Ingredients
- 1½ cups green or brown lentils, cooked
- 1 onion, carrots, celery, peas
- 2 tbsp tomato paste
- 4 cups mashed potatoes (made with olive oil and milk)
- 1 tsp thyme, rosemary
- 2 tbsp olive oil
Instructions
- 1 Preheat oven to 375°F. Sauté vegetables, add lentils and tomato paste.
- 2 Transfer to baking dish. Top with mashed potatoes.
- 3 Bake 30–40 minutes until golden.
