Lentil Mushroom Stuffed Peppers — a healthy halal recipe with 280 calories and 14g protein per serving.
Ingredients
- 4 large bell peppers, halved and seeded
- 1 cup green or brown lentils, cooked
- 8 oz mushrooms, finely chopped
- 1 onion, 3 garlic cloves, 1 carrot (diced)
- 1 (15 oz) can diced tomatoes, 2 tsp Italian herbs, salt & pepper
- ½ cup cooked rice or quinoa, olive oil, optional feta
Instructions
- 1Preheat oven 400°F. Sauté onion, carrot, and mushrooms until moisture evaporates. Add garlic and herbs.
- 2Stir in lentils, tomatoes, and rice. Simmer 5 min until thickened.
- 3Stuff pepper halves, place in baking dish with a little water at bottom. Cover and bake 30-35 min. Uncover last 10 min. Top with feta if desired.
