Lentil Loaf (Vegetarian Healthy Meatless) — a healthy halal recipe with 280 calories and 14g protein per serving.
Ingredients
- 1¾ cups cooked green or brown lentils
- 1 onion, 2 carrots, 2 celery stalks (finely chopped)
- 3 garlic cloves, 1 cup rolled oats
- ½ cup walnuts or sunflower seeds, chopped
- 3 tbsp tomato paste + ¼ cup ketchup (for glaze)
- 2 tsp thyme, 1 tsp smoked paprika, salt & pepper, 2 tbsp flax meal + 5 tbsp water (egg replacement)
Instructions
- 1Preheat oven 375°F. Sauté vegetables until soft.
- 2Mix all ingredients. Press into loaf pan lined with parchment.
- 3Top with ketchup glaze. Bake 45-55 min until firm. Rest 10 min before slicing.
