Lentil Kale Soup (One-Pot) — a healthy halal recipe with 240 calories and 13g protein per serving.
Ingredients
- 2 tbsp olive oil
- 1 onion, diced; 2 carrots, diced; 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 cup green or brown lentils, rinsed
- 1 (15 oz) can diced tomatoes
- 6 cups vegetable broth
- 1 tsp cumin, 1 tsp Italian seasoning
- 1 bunch kale, stems removed and chopped
- Salt, pepper, lemon juice
Instructions
- 1Heat oil; sauté onion, carrots, celery 7 min. Add garlic 1 min.
- 2Stir in lentils, tomatoes, broth, and seasonings. Bring to boil.
- 3Simmer 30 min. Add kale and cook 5-10 min until tender. Finish with lemon juice.
