Ingredients
- 1 cup red lentils, rinsed
- 1 large onion, 2 carrots, 2 celery stalks, 4 garlic cloves
- 1 (28 oz) can crushed tomatoes
- 2 tbsp tomato paste, 1 tsp dried oregano, 1 tsp basil, ½ tsp fennel seeds
- 2 tbsp olive oil, 12-16 oz pasta (whole wheat or regular)
- Fresh basil, nutritional yeast or parmesan
Instructions
- 1Sauté finely chopped vegetables in oil 8-10 min. Add garlic and tomato paste.
- 2Stir in lentils, crushed tomatoes, 2 cups water, and herbs. Simmer 25-30 min until lentils break down into thick sauce.
- 3Cook pasta al dente. Toss with sauce. Garnish with basil.
