Ingredients
- 1 cup red lentils, rinsed
- 2 medium sweet potatoes, peeled and cubed
- 1 onion, diced; 3 garlic cloves, minced; 1-inch ginger, grated
- 1 (14 oz) can coconut milk
- 4 cups vegetable broth
- 1 tsp turmeric, 1 tsp cumin, ½ tsp cinnamon, chili flakes (optional)
- 2 tbsp olive oil or coconut oil
- Salt, lime juice, fresh cilantro
Instructions
- 1Sauté onion, garlic, and ginger in oil until fragrant. Add spices and cook 1 minute.
- 2Stir in sweet potatoes, lentils, broth, and coconut milk. Bring to boil then simmer 25 minutes until lentils and potatoes are soft.
- 3Blend partially for creaminess. Finish with lime juice and cilantro. Serve with rice or naan.
