Ingredients
- 2 large eggplants
- 3-4 tomatoes, chopped
- 3 garlic cloves, minced
- 1 tsp cumin, 1 tsp paprika, 1/2 tsp chili flakes
- 3 tbsp olive oil, salt, fresh cilantro or parsley, lemon juice
Instructions
- 1Roast or grill eggplants until soft. Peel and chop pulp.
- 2Heat olive oil. Sauté garlic, add tomatoes, spices and cook down.
- 3Add eggplant pulp and mash together. Cook 10 min until thick. Finish with lemon juice and herbs. Serve warm or cold.
