Ingredients
- 1 cup brown or green lentils
- 2 large onions, thinly sliced
- 3 tbsp olive oil
- 1 tsp cumin, salt, black pepper
- Juice of 1 lemon
- Fresh parsley and mint, chopped
Instructions
- 1Cook lentils in water until tender but not mushy (20-25 min). Drain.
- 2In a skillet, heat olive oil and caramelize onions slowly until deep golden and sweet.
- 3Toss warm lentils with half the onions, cumin, lemon juice, salt, pepper and herbs.
- 4Top with remaining caramelized onions. Serve warm.
