Ingredients
  • 8-10 small zucchini, hollowed out
  • 1 cup short-grain rice, rinsed
  • 1 large onion, finely chopped
  • 2 tomatoes, chopped
  • 1/4 cup fresh mint and parsley, chopped
  • 1 tsp allspice, 1/2 tsp cinnamon, salt, black pepper
  • 3 tbsp olive oil, 2 tbsp tomato paste, lemon juice
Instructions
  1. 1Mix rice with onion, herbs, spices, olive oil and half the tomatoes for filling.
  2. 2Stuff zucchini loosely (rice expands).
  3. 3Arrange in a pot. Mix remaining tomatoes, tomato paste, lemon juice, salt and water to cover zucchini halfway.
  4. 4Simmer covered on low heat for 35-45 min until zucchini and rice are tender.
