Lebanese Stuffed Zucchini (Koosa) with Rice — a healthy halal vegetarian recipe with 280 calories and 7g protein per serving.
Ingredients
- 8-10 small zucchini, hollowed out
- 1 cup short-grain rice, rinsed
- 1 large onion, finely chopped
- 2 tomatoes, chopped
- 1/4 cup fresh mint and parsley, chopped
- 1 tsp allspice, 1/2 tsp cinnamon, salt, black pepper
- 3 tbsp olive oil, 2 tbsp tomato paste, lemon juice
Instructions
- 1Mix rice with onion, herbs, spices, olive oil and half the tomatoes for filling.
- 2Stuff zucchini loosely (rice expands).
- 3Arrange in a pot. Mix remaining tomatoes, tomato paste, lemon juice, salt and water to cover zucchini halfway.
- 4Simmer covered on low heat for 35-45 min until zucchini and rice are tender.
