Lebanese Spiced Lentil Soup with Lemon Juice — a healthy halal vegetarian recipe with 210 calories and 12g protein per serving.
Ingredients
- 1 cup green or brown lentils, rinsed
- 1 onion, chopped
- 2 carrots, chopped
- 3 garlic cloves, minced
- 1 tsp cumin, 1/2 tsp coriander, pinch cinnamon
- 2 tbsp olive oil, salt, black pepper
- Juice of 1-2 lemons, fresh cilantro or parsley
Instructions
- 1Heat olive oil. Sauté onion, carrots and garlic until softened.
- 2Add lentils, spices and 5-6 cups water. Bring to boil then simmer 25-30 min until lentils are tender.
- 3Season with salt, pepper and generous lemon juice. Garnish with herbs.
