Ingredients
  • 2 cups pumpkin puree (cooked)
  • 1.5 cups fine bulgur wheat, soaked
  • 1 onion, finely chopped
  • 1/4 cup chopped walnuts or pine nuts
  • 2 tsp allspice, 1 tsp cumin, salt, olive oil
  • Fresh mint and parsley
Instructions
  1. 1Mix pumpkin, drained bulgur, half the onion, spices and salt into a dough-like mixture.
  2. 2Sauté remaining onion with nuts and herbs for filling.
  3. 3Layer half kibbeh mixture in an oiled baking dish, add filling, top with remaining mixture. Score into diamonds.
  4. 4Drizzle olive oil generously. Bake at 375°F (190°C) for 30-35 min until golden.
