Lebanese Pumpkin Kibbeh - Baked — a healthy halal vegetarian recipe with 260 calories and 7g protein per serving.
Ingredients
- 2 cups pumpkin puree (cooked)
- 1.5 cups fine bulgur wheat, soaked
- 1 onion, finely chopped
- 1/4 cup chopped walnuts or pine nuts
- 2 tsp allspice, 1 tsp cumin, salt, olive oil
- Fresh mint and parsley
Instructions
- 1Mix pumpkin, drained bulgur, half the onion, spices and salt into a dough-like mixture.
- 2Sauté remaining onion with nuts and herbs for filling.
- 3Layer half kibbeh mixture in an oiled baking dish, add filling, top with remaining mixture. Score into diamonds.
- 4Drizzle olive oil generously. Bake at 375°F (190°C) for 30-35 min until golden.
