Ingredients
- 1 cup red lentils, rinsed
- 1 cup rice (basmati or short grain), rinsed
- 2 large onions, thinly sliced
- 1 tsp cumin powder, 1 tsp coriander powder, 1/2 tsp cinnamon optional
- 3-4 tbsp olive oil, salt to taste, fresh parsley
Instructions
- 1Cook lentils in 3 cups water until soft. Add rice, spices and salt. Cook until rice is tender (add water as needed).
- 2Meanwhile, heat olive oil and fry sliced onions until deep golden and crispy.
- 3Fluff mujaddara and top generously with crispy onions and parsley. Serve warm.
