Ingredients
  • 2 cups moghrabieh (pearl couscous)
  • 1 large onion, chopped
  • 2 carrots, 1 zucchini, handful green beans (chopped)
  • 1 can chickpeas, drained
  • 1 tsp caraway seeds, 1 tsp cumin, 1/2 tsp cinnamon, black pepper
  • 3 tbsp olive oil, salt, fresh cilantro
Instructions
  1. 1Cook moghrabieh according to package (boil 20-25 min) until tender. Drain.
  2. 2Heat oil, sauté onion and caraway. Add vegetables, chickpeas and spices. Cook 5 min.
  3. 3Add 2-3 cups water or broth and simmer 15-20 min until vegetables are soft and stew thickens.
  4. 4Serve over warm moghrabieh and garnish with cilantro.
