Lebanese Moghrabieh Pearl Couscous Stew - Vegetarian — a healthy halal vegetarian recipe with 420 calories and 14g protein per serving.
Ingredients
- 2 cups moghrabieh (pearl couscous)
- 1 large onion, chopped
- 2 carrots, 1 zucchini, handful green beans (chopped)
- 1 can chickpeas, drained
- 1 tsp caraway seeds, 1 tsp cumin, 1/2 tsp cinnamon, black pepper
- 3 tbsp olive oil, salt, fresh cilantro
Instructions
- 1Cook moghrabieh according to package (boil 20-25 min) until tender. Drain.
- 2Heat oil, sauté onion and caraway. Add vegetables, chickpeas and spices. Cook 5 min.
- 3Add 2-3 cups water or broth and simmer 15-20 min until vegetables are soft and stew thickens.
- 4Serve over warm moghrabieh and garnish with cilantro.
