Lebanese Lemon Lentil and Chard Soup — a healthy vegetarian halal recipe with 210 calories and 11g protein per serving.
Ingredients
- 1 cup red lentils
- 1 bunch Swiss chard, chopped (leaves and stems)
- 1 large onion, diced
- 4 garlic cloves, minced
- 6 cups vegetable broth
- Juice of 2 lemons
- 3 tbsp olive oil
- 1 tsp cumin, ½ tsp turmeric, salt & pepper
- Fresh cilantro
Instructions
- 1Heat oil, sauté onion and garlic. Add cumin and turmeric.
- 2Add lentils and broth. Simmer 20–25 min until lentils soften.
- 3Add chard stems for 5 min, then leaves until wilted.
- 4Stir in lemon juice and simmer 5 min. Adjust seasoning and garnish.
