Ingredients
- 5-6 large eggs
- 1 large bunch fresh parsley and mint, finely chopped
- 1 small onion, finely chopped
- 1-2 green chilies or bell pepper, chopped optional
- 1 tsp sumac or allspice, salt, black pepper
- 2-3 tbsp olive oil
Instructions
- 1Whisk eggs with salt, pepper and spices. Stir in chopped herbs and onion.
- 2Heat olive oil in a skillet. Pour in egg mixture.
- 3Cook on medium heat until bottom sets, then flip or fold. Cook until golden on both sides.
- 4Slice and serve warm with yogurt, tomatoes or bread.
