Lebanese Hashweh Spiced Rice with Mushrooms — a healthy halal vegetarian recipe with 380 calories and 8g protein per serving.
Ingredients
- 1.5 cups basmati rice, rinsed
- 8 oz mushrooms, sliced
- 1 large onion, chopped
- 1/4 cup pine nuts or almonds, toasted
- 1 tsp allspice, 1/2 tsp cinnamon, 1/2 tsp cumin
- 3 tbsp olive oil, salt, fresh parsley
Instructions
- 1Heat oil and sauté onion until soft. Add mushrooms and cook until golden.
- 2Stir in spices and rice. Toast 2 min. Add 3 cups water and salt.
- 3Bring to boil, reduce heat, cover and cook 15-18 min until rice is tender.
- 4Fluff rice and mix in toasted nuts and parsley.
