Lebanese Green Bean Stew (Loubieh) - Olive Oil — a healthy halal vegetarian recipe with 160 calories and 4g protein per serving.
Ingredients
- 1 lb (450g) fresh green beans, trimmed and cut into 2-inch pieces
- 1 large onion, finely chopped
- 3-4 garlic cloves, minced
- 3 tomatoes, chopped or 1 can (14 oz) diced tomatoes
- 1 tsp ground cumin, 1/2 tsp allspice or cinnamon, black pepper
- 3-4 tbsp olive oil, salt to taste
- Fresh cilantro or parsley for garnish, lemon wedges
Instructions
- 1Heat olive oil in a pot over medium heat. Add onion and sauté until soft and translucent (6-7 min).
- 2Add garlic and cook 1 min. Stir in tomatoes, cumin, allspice, salt and pepper. Cook until tomatoes break down (5-6 min).
- 3Add green beans and 1 cup water. Bring to a simmer, cover and cook on low heat for 25-30 min until beans are tender and sauce thickens.
- 4Adjust seasoning. Garnish with herbs and serve with rice or warm bread and lemon.
