Lebanese Freekeh Soup with Mushrooms — a healthy halal vegetarian recipe with 240 calories and 9g protein per serving.
Ingredients
- 1 cup freekeh (green wheat), rinsed
- 8 oz mushrooms, sliced
- 1 onion, chopped
- 2 carrots, chopped
- 3 garlic cloves, minced
- 1 tsp cumin, 1/2 tsp allspice
- 2 tbsp olive oil, salt, pepper, fresh parsley
- 6 cups vegetable broth or water
Instructions
- 1Heat olive oil. Sauté onion, carrots and garlic until softened.
- 2Add mushrooms and cook until golden. Stir in freekeh and spices for 2 min.
- 3Add broth, bring to boil then simmer covered for 25-30 min until freekeh is tender.
- 4Adjust seasoning and garnish with parsley.
