Lebanese Crispy Chickpea and Greens Bowl — a healthy halal vegetarian recipe with 320 calories and 14g protein per serving.
Ingredients
- 2 cans chickpeas, drained and dried
- 6 cups mixed greens (arugula, spinach, parsley)
- 1 cucumber and 2 tomatoes, chopped
- 1/4 cup tahini dressing (tahini + lemon + garlic)
- 2 tbsp olive oil, 1 tsp cumin, 1 tsp paprika, salt
- Toasted pine nuts or almonds
Instructions
- 1Toss chickpeas with olive oil, cumin, paprika and salt. Roast at 425°F for 20-25 min until crispy.
- 2Assemble bowls with greens, chopped vegetables and crispy chickpeas.
- 3Drizzle with tahini dressing and top with nuts. Serve immediately.
