Lebanese Chickpea and Tahini Fatteh — a healthy halal vegetarian recipe with 420 calories and 18g protein per serving.
Ingredients
- 2 cans (15 oz each) chickpeas, drained (or 3 cups cooked)
- 2-3 pita breads, toasted and broken into pieces
- 1/2 cup tahini
- 2-3 garlic cloves, minced
- Juice of 1-2 lemons
- 1 cup plain yogurt
- 1 tsp cumin, salt, olive oil
- Fresh parsley, toasted pine nuts or almonds for topping
Instructions
- 1Warm chickpeas in a pan with a little water, cumin and salt for 5 min.
- 2Whisk tahini with garlic, lemon juice, yogurt and salt into a creamy sauce (add water to thin if needed).
- 3Layer toasted pita pieces in a serving dish. Top with warm chickpeas, then pour tahini-yogurt sauce generously.
- 4Drizzle olive oil and garnish with parsley and toasted nuts. Serve immediately.
