Ingredients
  • 2 cups fine bulgur wheat, soaked 20 min
  • 2 cups cooked lentils or chickpeas, mashed
  • 2 large onions, 1 finely chopped for filling
  • 1/4 cup pine nuts or walnuts
  • 2 tsp allspice, 1 tsp cumin, salt, black pepper
  • 1/4 cup olive oil + extra for drizzling, fresh mint
Instructions
  1. 1Mix bulgur, mashed legumes, half the spices, grated onion and salt into a smooth dough.
  2. 2Sauté chopped onion with nuts, remaining spices and mint for filling.
  3. 3Press half kibbeh mixture into an oiled 9x13 baking dish. Spread filling, top with remaining mixture. Score diamonds.
  4. 4Drizzle generously with olive oil. Bake at 375°F (190°C) for 35-40 min until golden.
