Lebanese Baked Kibbeh Bil Sanieh - Vegetarian — a healthy halal vegetarian recipe with 340 calories and 12g protein per serving.
Ingredients
- 2 cups fine bulgur wheat, soaked 20 min
- 2 cups cooked lentils or chickpeas, mashed
- 2 large onions, 1 finely chopped for filling
- 1/4 cup pine nuts or walnuts
- 2 tsp allspice, 1 tsp cumin, salt, black pepper
- 1/4 cup olive oil + extra for drizzling, fresh mint
Instructions
- 1Mix bulgur, mashed legumes, half the spices, grated onion and salt into a smooth dough.
- 2Sauté chopped onion with nuts, remaining spices and mint for filling.
- 3Press half kibbeh mixture into an oiled 9x13 baking dish. Spread filling, top with remaining mixture. Score diamonds.
- 4Drizzle generously with olive oil. Bake at 375°F (190°C) for 35-40 min until golden.
