Indian Style Vegetable Pulao (Easy Weeknight) — a healthy vegetarian halal recipe with 340 calories and 7g protein per serving.

Ingredients
  • 1½ cups basmati rice, rinsed
  • 1 potato, 1 carrot, ½ cup peas, 1 bell pepper (chopped)
  • 1 onion, sliced
  • 1 tsp cumin seeds, 1 bay leaf, 4–5 cloves, 1 cinnamon stick
  • 2 tbsp ghee or oil, salt, fresh mint and cilantro
Instructions
  1. 1Heat ghee, sauté onion until golden. Add whole spices and vegetables; stir 3–4 min.
  2. 2Add rice and sauté 2 min. Pour in 3 cups water and salt.
  3. 3Bring to boil, then cover and cook on low 15–18 min until rice is fluffy.
  4. 4Fluff with fork and garnish with herbs. Serve with raita.
