Indian Style Vegetable Khichdi (One Pot Comforting) — a healthy vegetarian halal recipe with 320 calories and 10g protein per serving.
Ingredients
- ¾ cup rice, ½ cup moong dal (split)
- 1 potato, 1 carrot, ½ cup peas, 1 zucchini (chopped)
- 1 onion, 1 tomato, chopped
- 1 tsp cumin seeds, 1 tsp turmeric, ½ tsp garam masala, 1 tsp ginger-garlic
- 2 tbsp ghee or oil, salt, fresh cilantro
Instructions
- 1Rinse rice and dal together.
- 2Heat ghee in pot, add cumin, onion, ginger-garlic, and tomato. Sauté 3 min.
- 3Add vegetables, spices, rice-dal, salt, and 4 cups water. Pressure cook 3 whistles or simmer 20–25 min.
- 4Mash lightly and garnish with cilantro. Serve with yogurt.
