Indian Style Vegetable Biryani (Dum Style) — a healthy vegetarian halal recipe with 420 calories and 9g protein per serving.

Ingredients
  • 2 cups basmati rice, soaked 30 min
  • 3 cups mixed vegetables (carrot, beans, potato, cauliflower, peas)
  • 1 large onion sliced + 2 tomatoes
  • 1 tbsp ginger-garlic paste, 2 green chilies
  • 2 tsp biryani masala, 1 tsp turmeric, ½ tsp garam masala
  • 4 tbsp ghee, whole spices (bay leaf, cinnamon, cardamom, cloves), mint, cilantro, saffron milk
Instructions
  1. 1Parboil rice with whole spices until 70% cooked. Drain.
  2. 2Sauté onions until golden. Add ginger-garlic, tomatoes, vegetables, and spices. Cook 8–10 min.
  3. 3Layer in heavy pot: vegetables, rice, mint, cilantro, saffron milk, ghee. Seal with dough.
  4. 4Dum cook on low 20–25 min. Rest 10 min. Fluff and serve with raita.
