Indian Style Spiced Eggplant Brinjal Curry — a healthy halal vegetarian recipe with 140 calories and 4g protein per serving.

Ingredients
  • 4-5 medium eggplants (brinjal), slit or cubed
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 1 tbsp ginger-garlic paste
  • 1 tsp mustard seeds, 1 tsp cumin seeds
  • 1/2 tsp turmeric, 1 tsp coriander, 1/2 tsp garam masala, chili powder
  • 2-3 tbsp oil, salt, curry leaves, cilantro
Instructions
  1. 1Heat oil. Add mustard and cumin seeds. Add curry leaves, onion and sauté.
  2. 2Add ginger-garlic, tomatoes and spices. Cook masala.
  3. 3Add eggplants and salt. Mix gently, cover and cook on medium until soft (15-20 min), stirring occasionally.
  4. 4Garnish with cilantro.
