Ingredients
  • 1 cup rava (semolina)
  • 1 cup yogurt (plain)
  • ½ cup grated carrot, 2 tbsp chopped cilantro
  • 1 tsp mustard seeds, 1 tsp urad dal, 8–10 curry leaves, 1 green chili
  • ½ tsp baking soda or Eno fruit salt, salt
  • 1 tbsp oil or ghee
Instructions
  1. 1Dry roast rava lightly. Mix with yogurt, salt, and enough water to make thick batter. Rest 10 min.
  2. 2Heat oil, temper mustard seeds, urad dal, curry leaves, chili. Add to batter with carrot and cilantro.
  3. 3Stir in baking soda. Pour into greased idli molds.
  4. 4Steam 12–15 min. Serve hot with coconut chutney and sambar.
