Indian Style Pumpkin Curry (Kaddu) — a healthy halal vegetarian recipe with 140 calories and 3g protein per serving.
Ingredients
- 500g pumpkin (kaddu), peeled and cubed
- 1 onion, finely chopped (optional)
- 1 tsp cumin seeds
- 1/2 tsp turmeric, 1 tsp coriander powder, 1/2 tsp garam masala, 1/2 tsp amchur (dry mango), red chili powder
- 2 tbsp oil or ghee, salt, cilantro, optional green chili
Instructions
- 1Heat oil; add cumin seeds. Add onion and sauté.
- 2Add pumpkin cubes, all spices and salt; mix well.
- 3Cover and cook on low-medium heat, stirring occasionally until pumpkin is soft and slightly mashed (15-20 min). Add splash of water if needed.
- 4Finish with amchur and cilantro. Sweet-savory side dish.
