Indian Style Moong Dal Soup (Light Digestive) — a healthy vegetarian halal recipe with 180 calories and 10g protein per serving.
Ingredients
- ¾ cup yellow moong dal, rinsed
- 1 carrot, 1 tomato, chopped
- 1 tsp ginger, ½ tsp turmeric, ½ tsp cumin powder
- 1 tsp cumin seeds, pinch asafoetida
- 2 tbsp ghee, salt, fresh cilantro, lemon
Instructions
- 1Cook dal with turmeric, ginger, and vegetables in 4 cups water until very soft. Mash lightly.
- 2Heat ghee, add cumin seeds and asafoetida. Pour tadka into soup.
- 3Simmer 5 min. Adjust consistency with water if needed.
- 4Garnish with cilantro and lemon juice. Serve warm.
