Indian Style Mixed Vegetable Curry (Sabzi) — a healthy halal vegetarian recipe with 160 calories and 5g protein per serving.
Ingredients
- 2 cups mixed vegetables (carrots, beans, peas, cauliflower, potatoes), chopped
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 tbsp ginger-garlic paste
- 1 tsp cumin seeds
- 1/2 tsp turmeric, 1 tsp coriander, 1/2 tsp garam masala, chili powder to taste
- 2 tbsp oil, salt, fresh cilantro
Instructions
- 1Heat oil, add cumin. Sauté onion until golden. Add ginger-garlic and tomatoes; cook to masala.
- 2Add vegetables and spices; stir-fry 2-3 min.
- 3Add 1/2 cup water, cover and cook on medium until vegetables are tender (15-20 min).
- 4Dry out excess water if desired. Garnish with cilantro. Serve with roti.
