Ingredients
  • 2 cups mixed vegetables (carrots, beans, peas, cauliflower, potatoes), chopped
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 1 tbsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric, 1 tsp coriander, 1/2 tsp garam masala, chili powder to taste
  • 2 tbsp oil, salt, fresh cilantro
Instructions
  1. 1Heat oil, add cumin. Sauté onion until golden. Add ginger-garlic and tomatoes; cook to masala.
  2. 2Add vegetables and spices; stir-fry 2-3 min.
  3. 3Add 1/2 cup water, cover and cook on medium until vegetables are tender (15-20 min).
  4. 4Dry out excess water if desired. Garnish with cilantro. Serve with roti.
