Indian Style Lemon Rice - South Indian — a healthy halal vegetarian recipe with 250 calories and 5g protein per serving.
Ingredients
- 2 cups cooked basmati or sona masoori rice (cooled)
- 2-3 tbsp lemon juice
- 1 tsp mustard seeds, 1 tsp chana dal, 1 tsp urad dal
- 2-3 dried red chilies, 8-10 curry leaves
- 1/2 tsp turmeric, pinch asafoetida, salt
- 2 tbsp oil or ghee, roasted peanuts optional, cilantro
Instructions
- 1Heat oil; add mustard seeds, dals, red chilies, curry leaves and hing. Let splutter.
- 2Add turmeric and salt. Mix in cooked rice gently.
- 3Turn off heat, add lemon juice and peanuts. Toss well. Garnish with cilantro.
