Indian Style Lemon Rice - South Indian — a healthy halal vegetarian recipe with 250 calories and 5g protein per serving.

Ingredients
  • 2 cups cooked basmati or sona masoori rice (cooled)
  • 2-3 tbsp lemon juice
  • 1 tsp mustard seeds, 1 tsp chana dal, 1 tsp urad dal
  • 2-3 dried red chilies, 8-10 curry leaves
  • 1/2 tsp turmeric, pinch asafoetida, salt
  • 2 tbsp oil or ghee, roasted peanuts optional, cilantro
Instructions
  1. 1Heat oil; add mustard seeds, dals, red chilies, curry leaves and hing. Let splutter.
  2. 2Add turmeric and salt. Mix in cooked rice gently.
  3. 3Turn off heat, add lemon juice and peanuts. Toss well. Garnish with cilantro.
