Indian Style Kaddu Pumpkin Curry (Dry Sabzi) — a healthy vegetarian halal recipe with 130 calories and 3g protein per serving.
Ingredients
- 500g pumpkin (kaddu), peeled and cubed
- 1 onion, finely chopped
- 1 tsp cumin seeds, 1 tsp turmeric, 1 tsp coriander powder, ½ tsp garam masala, ½ tsp red chili powder, ½ tsp amchur
- 2 tbsp oil, salt, fresh cilantro
Instructions
- 1Heat oil, add cumin seeds. Sauté onion until golden.
- 2Add pumpkin cubes and all spices with salt. Stir well.
- 3Cover and cook on medium-low 18–22 min, stirring occasionally until pumpkin is tender and slightly caramelized.
- 4Garnish with cilantro. Serve with roti or dal-rice.
