Ingredients
- 2 large eggplants (baingan)
- 2-3 tbsp oil
- 1 large onion, finely chopped
- 1-2 green chilies
- 1 tbsp ginger-garlic paste
- 2 tomatoes, chopped
- 1 tsp cumin seeds
- 1/2 tsp turmeric
- 1 tsp coriander powder
- 1/2-1 tsp garam masala
- Salt, red chili powder to taste
- Fresh cilantro
Instructions
- 1Roast eggplants over open flame or broiler until charred and soft (15-25 min). Cool, peel, mash pulp.
- 2Heat oil; add cumin. Sauté onion until golden. Add ginger-garlic, chilies, tomatoes, spices; cook until oil separates.
- 3Mix in mashed eggplant; cook 8-10 min for smoky flavor. Garnish with cilantro. Serve with roti.
