Indian Style Dal Soup with Vegetables (Healthy) — a healthy vegetarian halal recipe with 200 calories and 11g protein per serving.
Ingredients
- ¾ cup mixed dal (moong + masoor), rinsed
- 1 carrot, 1 zucchini, handful spinach (chopped)
- 1 onion, 1 tomato, chopped
- 1 tsp ginger-garlic paste, 1 tsp turmeric, ½ tsp cumin powder
- 2 tbsp ghee or oil, salt, fresh cilantro, lemon
Instructions
- 1Cook dal with turmeric in 4 cups water until soft.
- 2Heat ghee, sauté onion, ginger-garlic, and tomato. Add vegetables and cook 5 min.
- 3Add cooked dal and simmer 10–12 min. Add spinach in last 3 min.
- 4Garnish with cilantro and lemon. Serve as light soup or with rice.
