Indian Style Colocasia Taro Curry (Arbi) — a healthy halal vegetarian recipe with 180 calories and 4g protein per serving.
Ingredients
- 500g taro root (arbi/colocasia), peeled and sliced into rounds
- 1 large onion, finely chopped
- 2 tomatoes, chopped or pureed
- 1 tbsp ginger-garlic paste
- 1-2 green chilies
- 1 tsp cumin seeds
- 1/2 tsp turmeric, 1 tsp coriander powder, 1/2 tsp garam masala, 1/2 tsp amchur, red chili powder to taste
- 2-3 tbsp oil or ghee, salt to taste, fresh cilantro
Instructions
- 1Boil or pressure cook taro slices with salt until just tender (8-10 min). Drain and set aside.
- 2Heat oil in a pan. Add cumin seeds, then onion and sauté until golden.
- 3Add ginger-garlic paste, green chilies, tomatoes and all spices. Cook until oil separates.
- 4Gently add cooked taro slices. Mix carefully to coat with masala. Cook covered on low heat for 8-10 min. Garnish with cilantro. Serve with roti.
