Indian Style Coconut Rice (South Indian Tempered) — a healthy vegetarian halal recipe with 380 calories and 7g protein per serving.
Ingredients
- 1½ cups basmati rice, cooked and cooled
- 1 cup fresh grated coconut
- 1 tsp mustard seeds, 1 tsp urad dal, 2 dried red chilies, 10–12 curry leaves
- 1 tbsp ginger, 2 green chilies
- 2 tbsp coconut oil or ghee, salt, roasted cashews
Instructions
- 1Heat coconut oil. Add mustard seeds, urad dal, red chilies, curry leaves, ginger, and green chilies.
- 2Add grated coconut and sauté until lightly golden.
- 3Add cooked rice and salt. Mix gently on low heat for 4–5 min.
- 4Garnish with roasted cashews. Serve with yogurt or pickle.
