Ingredients
- 2 (15 oz) cans chickpeas, drained
- 1 lb fresh spinach, chopped or pureed
- 1 onion, 2 tomatoes, chopped
- 1 tbsp ginger-garlic paste
- 1 tsp cumin, 1 tsp turmeric, 1 tsp coriander, ½ tsp garam masala
- 2 tbsp oil or ghee, salt
Instructions
- 1Heat oil, sauté onion until golden. Add ginger-garlic and spices.
- 2Stir in tomatoes and cook 5–6 min. Add chickpeas and ½ cup water; simmer 10 min.
- 3Add spinach and cook until wilted (5–7 min). Mash slightly for thickness.
- 4Serve with rice or roti.
