Indian Style Black-Eyed Pea Curry (Lobia) — a healthy halal vegetarian recipe with 280 calories and 16g protein per serving.
Ingredients
- 1.5 cups dried black-eyed peas (lobia), soaked overnight or 1 hour hot water
- 1 large onion, chopped
- 2 tomatoes, pureed
- 1 tbsp ginger-garlic paste
- 1-2 green chilies
- 1 tsp cumin seeds
- 1 tsp turmeric, 1.5 tsp coriander powder, 1 tsp garam masala, 1 tsp chili powder
- 2 tbsp oil or ghee, salt to taste, cilantro
Instructions
- 1Pressure cook soaked lobia with salt and turmeric until tender (15-20 min).
- 2Heat oil; add cumin. Sauté onion golden, add ginger-garlic and chilies.
- 3Stir in tomato puree and spices; cook until oil separates.
- 4Add cooked lobia with some cooking water; simmer 10 min until gravy thickens. Garnish with cilantro.
