Indian Style Baingan Masala Curry (Dry) — a healthy vegetarian halal recipe with 190 calories and 4g protein per serving.
Ingredients
- 4–5 medium eggplants, slit lengthwise
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 1 tbsp ginger-garlic paste
- 2 tsp coriander powder, 1 tsp turmeric, 1 tsp amchur, chili powder
- 4 tbsp oil, salt, fresh cilantro
Instructions
- 1Stuff eggplants with spice mix (coriander, turmeric, chili, salt, amchur).
- 2Heat oil, sauté onion and ginger-garlic. Add tomatoes.
- 3Place stuffed eggplants in pan, cover and cook on low 20–25 min, turning occasionally.
- 4Garnish and serve as side dish.
