  • 2 large eggplants
  • 1 large onion, 3 tomatoes, chopped

Instructions
  1. 1Roast eggplants over flame or in oven at 425°F until charred and soft. Peel and mash.
  2. 2Heat oil, add cumin. Sauté onion, ginger-garlic, tomatoes, and spices.
  3. 3Add mashed eggplant and cook 8–10 min until smoky and blended.
  4. 4Garnish with cilantro. Serve with roti.
