Indian Style Baingan Bharta (Tandoor Style) — a healthy vegetarian halal recipe with 160 calories and 4g protein per serving.
Ingredients
- 2 large eggplants
- 1 large onion, 3 tomatoes, chopped
- 1 tbsp ginger-garlic paste
- 1 tsp cumin seeds, 1 tsp turmeric, 1 tsp coriander, ½ tsp garam masala, chili powder
- 3 tbsp oil, fresh cilantro
Instructions
- 1Roast eggplants over flame or in oven at 425°F until charred and soft. Peel and mash.
- 2Heat oil, add cumin. Sauté onion, ginger-garlic, tomatoes, and spices.
- 3Add mashed eggplant and cook 8–10 min until smoky and blended.
- 4Garnish with cilantro. Serve with roti.
