Ingredients
- 4 medium potatoes, cubed
- 1 lb fresh spinach, pureed or finely chopped
- 1 onion, 2 tomatoes, chopped
- 1 tbsp ginger-garlic paste
- 1 tsp cumin seeds, 1 tsp turmeric, 1 tsp coriander, ½ tsp garam masala, chili powder
- 3 tbsp oil, salt
Instructions
- 1Boil or lightly fry potato cubes; set aside.
- 2Heat oil, add cumin. Sauté onion, ginger-garlic, tomatoes, and spices.
- 3Add spinach puree and cook 5–7 min. Add potatoes and simmer 8–10 min.
- 4Serve with roti or rice.
