Ingredients
- 2 tbsp olive oil
- 1 onion, diced; 2 carrots, diced; 2 celery stalks, diced
- 4 garlic cloves, minced
- 2 (15 oz) cans white beans (cannellini), drained
- 1 (15 oz) can diced tomatoes
- 6 cups vegetable or halal chicken broth
- 1 tsp rosemary, 1 tsp Italian seasoning, bay leaf
- 4 cups kale or spinach, chopped
- Salt, pepper, lemon juice to finish
Instructions
- 1Heat oil; sauté onion, carrots, celery 6-7 min. Add garlic 1 min.
- 2Add beans, tomatoes, broth, rosemary, and bay leaf. Simmer 20 min.
- 3Mash some beans for creaminess. Stir in greens until wilted (5 min). Remove bay leaf, finish with lemon juice and seasoning.
