Ingredients
- 2 tbsp olive oil
- 1 onion, diced; 3 carrots, diced; 3 celery stalks, diced
- 3 garlic cloves, minced
- 1 zucchini, diced; 1 cup green beans, chopped
- 1.5 cups green or brown lentils, rinsed
- 1 (15 oz) can diced tomatoes
- 7 cups vegetable broth
- 1 tsp cumin, 1 tsp Italian seasoning, bay leaf
- 3 cups chopped kale or spinach

Instructions
- 1Heat oil; sauté onion, carrots, celery 7 min. Add garlic and remaining vegetables 3 min.
- 2Stir in lentils, tomatoes, broth, cumin, Italian seasoning, and bay leaf.
- 3Simmer 30-35 min until lentils are tender. Stir in greens until wilted. Remove bay leaf and garnish with parsley.
