High Protein Tofu Scramble (Vegetarian Breakfast) — a healthy halal recipe with 240 calories and 22g protein per serving.
Ingredients
- 2 (14 oz) blocks firm tofu, pressed and crumbled
- 1 onion, 1 bell pepper, 2 cups spinach
- 3 garlic cloves, minced
- 2 tsp turmeric, 1 tsp cumin, ½ tsp smoked paprika, black salt (kala namak) for eggy flavor
- 2 tbsp nutritional yeast, salt & pepper
- Olive oil, cherry tomatoes, fresh herbs
Instructions
- 1Heat oil in a large skillet. Sauté onion and pepper 4-5 min. Add garlic and spices.
- 2Add crumbled tofu and nutritional yeast. Cook 6-8 min, stirring occasionally.
- 3Stir in spinach and tomatoes until wilted. Serve hot with toast or in breakfast bowls.
