High Protein Tofu and Edamame Stir Fry Recipe (Asian-Inspired) — a healthy halal vegetarian recipe with 350 calories and 28g protein per serving.
Ingredients
- 14-16 oz extra-firm tofu, pressed and cubed
- 2 cups shelled edamame (frozen, thawed)
- 1 bell pepper, sliced
- 1 broccoli head, cut into florets
- 1 carrot, julienned
- 4 green onions, sliced
- 3 garlic cloves + 1 tbsp ginger, minced
- 3 tbsp low-sodium soy sauce or tamari
- 1-2 tbsp sesame oil or neutral oil
- 1 tbsp cornstarch (for tofu)
- Optional: chili flakes or gochujang (check halal) for heat; serve over cauliflower rice or brown rice
Instructions
- 1Toss tofu cubes in cornstarch, salt, and pepper. Pan-fry in hot oil until crispy (8-10 min). Remove.
- 2Stir-fry veggies, garlic, and ginger in remaining oil for 4-5 minutes. Add edamame.
- 3Return tofu, add soy sauce and a splash of water. Toss 2-3 minutes. Garnish with green onions.
