Ingredients
  • 14-16 oz extra-firm tofu, pressed and cubed
  • 2 cups shelled edamame (frozen, thawed)
  • 1 bell pepper, sliced
  • 1 broccoli head, cut into florets
  • 1 carrot, julienned
  • 4 green onions, sliced
  • 3 garlic cloves + 1 tbsp ginger, minced
  • 3 tbsp low-sodium soy sauce or tamari
  • 1-2 tbsp sesame oil or neutral oil
  • 1 tbsp cornstarch (for tofu)
  • Optional: chili flakes or gochujang (check halal) for heat; serve over cauliflower rice or brown rice
Instructions
  1. 1Toss tofu cubes in cornstarch, salt, and pepper. Pan-fry in hot oil until crispy (8-10 min). Remove.
  2. 2Stir-fry veggies, garlic, and ginger in remaining oil for 4-5 minutes. Add edamame.
  3. 3Return tofu, add soy sauce and a splash of water. Toss 2-3 minutes. Garnish with green onions.
