Ingredients
  • 14 oz extra-firm tofu, cubed
  • 4 cups broccoli florets
  • 2 cups cooked brown rice or quinoa
  • 3 garlic cloves + 1 tbsp ginger
  • 3 tbsp low-sodium soy sauce or tamari
  • 1 tbsp sesame oil + 1 tbsp neutral oil
  • 1 tbsp rice vinegar or lemon
  • Green onions and sesame seeds
Instructions
  1. 1Press and cube tofu; toss with 1 tbsp soy sauce. Pan-fry until crispy (8-10 min). Remove.
  2. 2In same pan, stir-fry broccoli, garlic, and ginger 4-5 minutes.
  3. 3Add remaining soy sauce, vinegar, and tofu. Toss well.
  4. 4Serve over rice, garnish with green onions and sesame seeds.
