High Protein Tofu and Broccoli Rice Bowl Recipe — a healthy halal vegetarian recipe with 380 calories and 24g protein per serving.
Ingredients
- 14 oz extra-firm tofu, cubed
- 4 cups broccoli florets
- 2 cups cooked brown rice or quinoa
- 3 garlic cloves + 1 tbsp ginger
- 3 tbsp low-sodium soy sauce or tamari
- 1 tbsp sesame oil + 1 tbsp neutral oil
- 1 tbsp rice vinegar or lemon
- Green onions and sesame seeds
Instructions
- 1Press and cube tofu; toss with 1 tbsp soy sauce. Pan-fry until crispy (8-10 min). Remove.
- 2In same pan, stir-fry broccoli, garlic, and ginger 4-5 minutes.
- 3Add remaining soy sauce, vinegar, and tofu. Toss well.
- 4Serve over rice, garnish with green onions and sesame seeds.
