Ingredients
  • 1 (15-oz) can chickpeas, drained
  • 1 (15-oz) can kidney beans, drained
  • 1 (15-oz) can green beans or cannellini, drained
  • 1 red bell pepper, diced
  • ½ red onion, diced
  • ¼ cup fresh parsley, chopped
  • Dressing: ⅓ cup olive oil, juice of 2 lemons, 1 tbsp apple vinegar, 2 garlic cloves, 1 tsp oregano, salt & pepper.
