Ingredients
  • 1 cup uncooked quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 (15-oz) can chickpeas, drained
  • 1 cucumber, diced
  • 2 cups cherry tomatoes, halved
  • ½ red onion, diced
  • 1 red bell pepper, diced
  • ½ cup halal feta, crumbled
  • ¼ cup fresh parsley & dill, chopped
  • Dressing: ¼ cup olive oil, juice of 1-2 lemons, 1 tbsp apple vinegar (halal), 1 tsp oregano, salt & pepper.
Instructions
  1. 1Cook quinoa in water/broth per package (~15 min), then fluff and cool.
