High Protein Quinoa Feta Salad Recipe — a healthy halal recipe with 350 calories and 15g protein per serving.
Ingredients
- 1 cup uncooked quinoa, rinsed
- 2 cups water or vegetable broth
- 1 (15-oz) can chickpeas, drained
- 1 cucumber, diced
- 2 cups cherry tomatoes, halved
- ½ red onion, diced
- 1 red bell pepper, diced
- ½ cup halal feta, crumbled
- ¼ cup fresh parsley & dill, chopped
- Dressing: ¼ cup olive oil, juice of 1-2 lemons, 1 tbsp apple vinegar (halal), 1 tsp oregano, salt & pepper.
Instructions
- 1Cook quinoa in water/broth per package (~15 min), then fluff and cool.
- 2Whisk dressing. Combine quinoa with veggies, chickpeas, herbs, and feta.
- 3Toss with dressing. Chill 10-15 min before serving.
